Matt Rojas, Chef
Matt Rojas is the Executive Chef of Parlor. In recent years he was inducted into the Best Chefs America guidebook. A product of acclaimed restaurant Eleven Madison Park, Chef Rojas has worked alongside the most gifted chefs of our generation, including Daniel Humm, Nobuo Fukuda, Wesley Genovart and Susur Lee. His cuisine is best described as globally-influenced contemporary American.
Served evenings in the elegant Hudson Dining Room, our tasting menu consists of four courses and features cuisine that draws inspiration from an eclectic mix of locally-sourced produce and exotic ingredients. The tasting menu is edited weekly by Chef Matt Rojas and may be complemented with an optional wine pairing, carefully selected by Sommelier Jared Fischer.
À La Carte Menu
Anchored by a selection of fine caviar and re-envisioned classics, the à la carte menu at Parlor features a set of modestly-portioned bites that reveal a spirit of decadence. The menu’s rich selections include Chef Rojas’ Filet Mignon Sliders and signature Foie Gras Lobster Burger. À la carte service is available in Spring lounge from 6pm until midnight.
